GF Cinnamon Blueberry Pancakes

After going to Michigan this weekend, I was ready for a cozy home-cooked meal Sunday night.  A family favorite has always been pancakes and waffles, so this was an inevitable post to show up on the blog.  After all, what’s better than breakfast for dinner?  I’ll tell you what- spruced up breakfast for dinner!  The base of the recipe is from “The Joy of Cooking.”  Then I de-glutened it, tossed in a few blueberries and sprinkled some cinnamon into the batter.  Here it goes:

2 cups GF Flour

2 tsp. sugar

1 tsp. salt

1  1/2 tsp. baking powder

1 tsp. baking soda

2 tsp. cinnamon

2 eggs

2 c. buttermilk

3 tsp. melted butter

2 tsp. vanilla

Start out by mixing the flour, sugar, salt, baking powder, baking soda, and cinnamon in a large mixing bowl.  In a medium bowl, beat 2 eggs.  Then add buttermilk, melted butter, and vanilla.  Combine the liquid and dry ingredients, but be sure not to over-mix.  Now is time to heat up the griddle!  Then spraying some Pam on it and get the pancakes a-cookin’!
